What is the magic that makes a mug cake bake up in less than two minutes, when even a small cake in your regular oven takes so much longer? The science behind it is in the way your microwave transmits heat, directly interacting with the water molecules inside your cake batter. As it heats up quickly from inside to outside (the opposite of how a regular oven cooks), the turntable rotates the mug to ensure even cooking. Then, ding! Your cake is done!

How Do I Store Leftovers?

If you have leftover mug cake, you can cover the mug with plastic wrap, store it at room temperature for up to 24 hours, and reheat gently (at reduced power) in the microwave.

Ingredients
  

  • 3 tablespoons all-purpose flour
  • 2 tablespoons brown sugar
  • 4 teaspoons unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 cup milk
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon vanilla extract
  • Chocolate chips optional
  • Ice cream or whipped cream for serving

Instructions
 

  • In a large microwave-safe mug, mix together flour, brown sugar, cocoa powder, baking powder, and salt.

  • Add milk, vegetable oil, and vanilla extract to the mug. Stir or whisk until the mixture is smooth and there are no lumps. If using chocolate chips, mix them in.

  • Serve warm with a scoop of ice cream or some whipped cream on top.
