I don’t know about you, but I try to balance my sugar cookies with some healthier fare this time of year. I have already made 4 chocolate rolls, countless batches of candied pecans, many cups of hot chocolate and lots of other holiday treats. Just because you want to be a little bit healthy, doesn’t mean you cannot indulge in holiday goodness. My Eggnog Smoothies have all of the festive flavor, but none of the guilt. These smoothies are a great way to start a busy holiday morning. Frozen bananas, dates, lots of spices, almond milk, and a little dash of extract. These taste so much like the real thing, you would never guess that they are dairy-free. I topped mine with a touch of Truwhip and grated some extra nutmeg on top. It felt like a very special way to start my day.

NYC at ChristmastimeI have to be honest, sometimes I have a hard time getting into Christmas. I don’t want to seem like a Scrooge, but I don’t love the extra hustle and bustle the holiday can bring. The holiday parties, the gift buying, the pressure to have the “perfect” Christmas. Sometimes it can just feel like a lot. When you are feeling this way, the best way that I can think of to rectify this problem is to take a trip to Rockefeller Center. I had a meeting in New York City last week and decided to take an extra day to spend some time with my sister. She indulged me and we did all of the touristy Christmas stuff that NYC has to offer. It cured my holiday blues. I had forgotten about how beautiful the city is this time of year. It is magical. I can’t wait for next year.

3 cups Almond Breeze Almond Coconut milk
1 frozen banana
1/2 teaspoon freshly grated nutmeg
1/2 Tablespoon cinnamon
1/2 teaspoon almond extract
2 pitted dates

Eggnog Smoothies - You can stay on track even during the holiays.

Ingredients

  • 3 cups Almond Breeze Almond Coconut milk
  • 1 frozen banana
  • 1/2 teaspoon freshly grated nutmeg
  • 1/2 Tablespoon cinnamon
  • 1/2 teaspoon almond extract
  • 2 pitted dates

Instructions

  1. Add everything to the blender. Run until smooth.
  2. Top with non-dairy whipped cream and grate nutmeg over top.

  2. I have loved eggnog since childhood, am now age 70. Yum. Still.
    Too bad this recipe isn’t for eggnog.
    Did I miss something? I didn’t see any mention of egg in the llst of ingredients.
    Isn’t that what FDA calls deceptive advertising?

    1. No, it is eggnog flavored. Spiced like eggnog. No FDA deception here.

    1. Just halve the recipe.
