This Marinated Feta Cheese is less recipe and more method. The tangy taste works well on its own and when paired with sandwiches, salads and sides.

Remember my Marinated Mozzarella recipe? You do? Awesome. Well, this is a variation of that and it is nothing short of amazing. My Marinated Feta Cheese is salty feta with lemon, rosemary and red pepper flakes. I like to eat my Grilled Chicken Skewers like a sandwich. I spread some Yogurt Herb Dipping Sauce on the inside of a pita. Add some of the peppers, onions, and chicken and top it with this feta cheese. The best sandwich you will ever eat. Believe me. I know a good thing when I eat it.
Hosting tip //
I have learned after years of entertaining that is easiest to have all white everything. Plates, platters, everything white. I do have a few colored pieces that I love (see above) but if everything is white, everything matches. I wish that I knew this when I was registering when I got married. I love that I can add to my platter collection and dishes and it all looks great together on the table. It doesn’t have to be boring either. You can change up your lines and flowers and there are also gorgeous square plates and platters that are affordable. We move quite often and things break. It is a lot easier to replace a white piece than a platter with a big ol’ rooster on it. Just saying.

Ingredients //
- 2 blocks of feta cheese cut into small cubes (you could also use crumbled feta)
- 1 sprig of fresh rosemary
- 2 minced garlic cloves
- A dash of red pepper flakes (I forgot to add them to my ingredient shot)
- The zest of one lemon
- The juice of one lemon
- Salt
- Pepper
- Olive oil
Instructions //
Step 1:
Add the ingredients to a bowl.

Step 2:
Cover the cheese with olive oil. Give it a taste. Does it need more lemon? Garlic? Salt or pepper? When you are happy with it, put in a bowl to serve and cover. When you are ready to serve, let it come to room temperature. You may need to season again after it has been chilled.

There you have it. A Marinated Feta Cheese, Greek Feast. Wasn’t that easy? No stressing out. No kitchen meltdowns. Just a nice and easy menu for your next get together.
