Grilled Chicken Skewers

grilled chicken skewers recipeHere is the main course for my Greek Feast dinner party.  I love this dish for a few reasons.  You make everything ahead of time, it is delicious, it is healthy, and it can be served hot or at room temperature.  This recipe comes from Cooks Country, which is a division of America’s Test Kitchen.  They are specific about details and steps.  The beauty of recipes from these two sources is that you know that they have been tested over and over again and that they will always turn out when you make them.  I say this because they are very specific about the marinating time for the chicken.  You need to marinate the chicken for at least 3 hours to get the maximum flavor (and that is what we are after) but less than 6 hours or the chicken will get mushy and start to break down from the yogurt.  You can however, prep the chicken and vegetables the day before and just add the chicken to the marinade day of.

TIPDon’t wait until you are about to serve your dinner to decide what platters you are going to serve them on.  Pull out what you are going to use and if you are a super geek like me, label the platter with a Post-it note so that you know what is going where.

For the chicken and marinade:

1/2 cup plain Greek Yogurt
1/4 cup olive oil
2 minced garlic cloves
2 teaspoons dried thyme
2 teaspoons dried oregano
1/4 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon pepper
4 boneless, skinless chicken breasts cut into one inch cubes

For the lemon dressing:

2 Tablespoons chopped fresh basil
1/4 cup olive oil
2 minced garlic cloves
3 Tablespoons lemon juice

To make the kebobs:

2 red peppers ( or 1 red and 1 yellow)
1 large red onion cut into chunks
long wooden skewers

To serve:

pita bread
Yogurt Herb Dipping Sauce

In another bowl, make the Lemon Dressing.  You will brush this on the skewers after they come off the grill.

grilled chicken skewers recipeGet your veggies ready and thread on skewers that have been soaked in water for about 30 minutes.  Otherwise the wood skewers will catch on fire.  Don’t ask me how I know that.

grilled chicken skewers recipeGrill over high heat until the chicken and vegetables are charred around the edges on all four sides and cooked through.  About 3 minutes per side.  Put on a platter and brush with the Lemon Dressing before serving.

    Oh my, these look delicious! I am definitely going to be hosting a “Greek Feast” party soon. Thanks so much for the inspiration! Oh, and I totally do the post-it on the platter thing. Everyone thinks I’m nuts, but it makes me feel that much more prepared and remian somewhat calm.

    These sound incredible! Great photos!

    I was never very keen on using the grill, but lately I want to grill everything. This recipe seems perfect too because it’s full of stuff I’ve generally got in the kitchen. Yum!

    Once you start grilling, you really do want to grill everything. I like to grill when it is really hot so that I do not have to turn on my oven. You an cook almost anything on the grill.

    Hi Bree! Tried out this grilled chicken recipe for lunch today and it was absolutely fantastic. Light & perfect. Made it using low fat plain yogurt as greek yogurt wasn’t readily available at my local supermarket (I’m in India), so just wondering what the taste difference would have been had I used greek yogurt. slightly more sour maybe?
    Stumbled upon your website on Friday & loving the recipes so far! This is the first that I’ve made, and I’m sure to try out a lot more! 🙂 Big hug!

    It would have just been thicker. Greek yogurt also has more protein, but it would not have changed the taste at all. Glad you liked it! I love this dinner.
