Seriously, though, when it comes to cobblers, apple, cherry, and peach get the top billing. They’re the most familiar, and for good reason. They taste amazing. Juicy, sweet, and a little tart, they’re full of flavor and a great option for a snack or to pack with your lunch. However, plums really shine when baked in dishes like a cobbler, where that natural juiciness and flavor cook into a delicious filling that contrasts with a biscuit-like topping.

  • 8 cups fresh plums pitted and sliced
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 3 tablespoons cornstarch
  • 3/4 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter cold and cubed
  • 2/3 cup milk
  • Vanilla ice cream for serving

Instructions
 

  • In a large mixing bowl, combine sliced plums, granulated sugar, light brown sugar, cornstarch, and cinnamon.

  • Preheat the oven to 375°F. Spoon the plum mixture into a 9- or 10-inch baking dish.
  • In a medium mixing bowl, combine flour, granulated sugar, baking powder, and salt.
  • Add the cold cubed butter to the flour mixture. Using a pastry blender or two forks, cut in the butter until the mixture resembles coarse crumbs. Stir in the milk just until the dough comes together.
