How to Make // The Steps

Step 1: To make the dressing, pour the balsamic vinegar, olive oil, herbs and salt and pepper into a jar and mix together.

Can I use full-sized cucumbers?

Yes, feel free. I like to use baby cucumbers, they are the most crunchy and add a really nice bite.

Can I make this dish in advance?

You can slice your tomatoes, cucumbers and onions a few hours in advance, but don’t mix in the dressing as that tends to make the tomatoes go a little soft.

Can I use fresh herbs instead of dried herbs?

Yes, fresh herbs are really nice to use in this one. I would suggest dill, parsley or basil.

How To Store Cucumber and Tomato Salad //

Drain any excess liquid from the salad. Put it in an airtight container and store it in the fridge for up to 2 days. Beyond that, the vegetables will start to turn mushy and lose their freshness. I don’t recommend freezing the salad; the high water content in the veggies will lead to them turning to mush upon thawing.
