Okay, let’s say you signed up for a potluck weeks ago and now it’s the day before and you have no ideas! This is a completely made up story and not something that’s ever happened to me, I swear! You could go pick up something from the store and plate it on one of your own serving trays to make it look like you made it, but I have a proposal for you! These keto burritos are easy to make, easy to transport, and easy to make in bulk! Definitely the perfect potluck food.

My friends were surprised when I served them keto burritos. “We want a ‘regular’ burrito,” they said. I told them to at least try a bite and see what they think. Minds were changed that Friday night! Everyone enjoyed their burritos and someone even asked me for the recipe. These burritos are crunchy, well-seasoned, and fresh! The sautéed onions are my favorite part, and sometimes I’ll add a sprinkle of lime juice to the mixture for additional flavor.

Burritos are fun because you can customize them based on your preferences! If you want to change up the veggies, spinach and green bell peppers are other keto-friendly vegetables. These burritos are also perfect for lunch. They fit perfectly in a lunchbox and can be heated up in a microwave very quickly.

What is a keto diet?

A keto diet is a low carb, high fat diet. Some people eat keto to lose weight or for improving type 2 diabetes. Keto diets can also reduce blood sugar levels. The keto diet isn’t for everyone, so do your own research and communicate with your doctor if you’re planning on transitioning to a full keto diet.

Ingredients

  • 1 head cabbage, cored
  • 2 tablespoons olive oil
  • 1 cup onion, chopped
  • 4 tablespoons keto-friendly taco seasoning
  • 1 pound ground turkey
  • 1 cup tomato sauce, no sugar added
  • 1/2 cup sour cream
  • 1/4 cup salsa, no sugar added
  • 1 cup sharp cheddar cheese, shredded
  • 1 avocado, sliced

How to Make Keto Burrito

Step 1: Bring a large pot of water to a boil. Submerge the cored head of cabbage and blanch for about 3 minutes. Carefully remove the leaves with tongs, setting aside 8 large leaves for the burritos.

Step 2: Thin the thick part of the cabbage leaves’ core with a knife for easier rolling, if necessary.

Step 3: In a large skillet, heat olive oil over medium heat. Sauté chopped onion until softened, about 6 minutes.

Step 4: Stir in the taco seasoning and cook until fragrant, about 2 minutes.

Step 5: Add the ground turkey to the skillet, breaking it apart as it cooks until it’s no longer pink, about 4 minutes.

Step 6: Pour in the tomato sauce and let the mixture simmer until the sauce thickens and the turkey is fully cooked, about 4-6 minutes. Adjust seasoning to taste.

Step 7: Place two overlapping cabbage leaves on a flat surface. Spoon the turkey mixture onto the leaves, followed by sour cream, salsa, cheddar cheese, and avocado slices.

Step 8: Fold the edges of the cabbage leaves over the filling and roll tightly into a burrito shape. Slice in half and serve warm.

How to Make Ahead and Store?

To make these burritos ahead of time, assemble the burritos and wrap each one individually in cling wrap. The wrapped burritos can be stored in the freezer for up to 3 months. To serve, let the burrito thaw in the fridge overnight and then microwave for 2 minutes.

What are some other wrap ideas?

If you don’t want to use cabbage as your burrito’s blanket, you could use almond flour tortillas or romaine lettuce leaves.

Add water to meat if needed

If you’re cooking with lean turkey and you notice it’s a little dry, you can add a couple of tablespoons to keep it moist.

I love making these burritos ahead of time! It makes for the fastest, healthiest dinner I think I’ve ever made! However, I like to offer a few more options for my family. Cauliflower rice is a good match for these burritos! Cauliflower rice is also low in carbs, but still tasty! Another idea? Guacamole! I cannot get enough of guacamole. There’s a local Mexican restaurant a few blocks from my house and sometimes I’ll stop in just for a side of guacamole.

Another topping that would be perfect for these burritos is this cilantro lime dressing. You can customize the heat level depending on your preference. If you’re like me, you want all the spice possible!
