Mom always told us to eat our veggies as kids. Much to most of our chagrin, of course – why isn’t birthday cake or mint chocolate chip ice cream okay for dinner? What about Frosted Flakes or Twinkies? We now all know why – veggies are loaded with nutrients. Some veggies are especially good for us, often labeled ‘superfoods’ and asparagus is one such vegetable that comfortably sits in that category. Why? Because this bright green veggie offers vitamins B6, A, E, C, and K. Asparagus also gives you a dose of fiber and copper. And it has iron, protein, and calcium, too.

What Size of Asparagus Stalks Should I Buy?

You can pick any size of spears you choose, but we suggest using medium spears. Heartier, fat spears can also handle high heat and can be easier to move around the pan. However, they can be tougher in texture. Thin spears can get limp and mushy when the heat is high.

Can I Store This Asparagus For Later?

It’s best the day it’s cooked – but it’ll be good for up to 3 days in the fridge. Cook it, cool it, then stick it in a lidded container. You can warm it up or eat it cold. To reheat it, put it in a hot pan for half a minute on each side. Keep in mind, we don’t recommend freezing it as it alters the texture of the veggies too much.

Should I Soak My Asparagus?

If you so wish. Simply cut off the ends, rinse the spears, and put them in cold water for five minutes. Because they already have some water in them, your asparagus spears will cook more speedily. However, don’t let them soak any longer than that as they’ll get limp and soggy.

What Else Can I Use to Top My Asparagus?

Ground almonds or walnuts add some crunch to your asparagus. Lemon, Parmesan and mozzarella cheese also make top-notch toppers.

Ingredients
  

  • 1 pound fresh asparagus spears trimmed
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 clove garlic minced

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add the asparagus spears to the skillet in a single layer, trying not to overcrowd them.
