Today, I’ve got a little secret I want to share with you – one of my all-time favorite recipes, the Easy Green Goddess Dressing recipe. Picture walking through a lush, fragrant garden with all these gorgeous herbs chillin’ with tangy Greek yogurt with some posh olive oil. It’s like having a magic potion in your kitchen (and yes, I do identify as a witch when it comes to cooking, thanks)!

At one point in college, I was going through an insane amount of herbs trying to recreate this lunch I had at this really cute café I found while on spring break. But it wasn’t the cozy roasted chicken or the savory roasted potatoes that stole my heart in this meal. It was the Green Goddess dressing that was just casually poured over a bunch of fresh, crispy salad leaves that had me obsessing!

This dressing is like the fun cousin of your go-to ranch dressing; looks creamy, tastes rich, is super healthy and, guess what, zero guilt! Plus, it kind of reminds me of chimichurri, but minus the spice hit – absolute perfection for those who are all about the herbs but like things a bit softer. You’re going to love it as much as I did.

Ingredients

The herbs listed are my faves but can be adjusted to suit your preferences.

  • 1 cup Greek yogurt
  • 1 cup parsley
  • 1 cup mixed herbs (basil, mint, dill, and chives)
  • 2 stalks of spring onions, chopped
  • 2 tbsp lemon juice
  • ¼ cups olive oil
  • 2 tsp capers
  • 1 clove garlic
  • salt and pepper

How to Make Green Goddess Dressing

Step 1: Combine all the ingredients in a blender.

Step 2: Blend the ingredients until you get a smooth and creamy consistency. 

Step 3: If the dressing looks too thick, add a small amount of water to thin it out.

What if I’m just not feeling the Greek yogurt?

Look no further than your friendly neighborhood avocado. Sub it in and you’ve still got that rich, creamy texture with bonus points for an added dose of healthy fats. Win!

I’ve run out of lemons. Can I use something else?

Absolutely! Replace the lemon juice with apple cider vinegar, white wine vinegar, or go wild and use lime juice. Don’t worry: you’ll still attain that fresh, vibrant flavor.

Can I use dried herbs?

Using fresh herbs makes all the difference, I recommend strongly against using dried herbs. I recommend trying tarragon or cilantro if you want to play with the flavors a little bit.

It’ll last you about five days. When you’re ready to serve your tangy, herby goodness, just give it a good mix before using, adding that extra ‘oomph’ to your meal.
